So while i was recuperating from my fall i spent much time hanging out at art's house. His parent's are awesome and i got along well with his momma. his momma makes this awesome onion cake, which is more like a many layered bread, but she doesn't have anyone to pass on the recipe to because art doesn't cook so that where i came in. =]
these are directions according to art's momma, but it may be hard to follow since it was a learn as you watch/do kind of lesson. So this is more for me, so i don't forget the recipe. =]
-self rising flour (~4 cups, add more if needed)
-yeast (2 tbsp)
-sugar (1 tsp)
-warm water (1.5 cups)
-green onion (~2 bundles for each loaf)
-extra virgin olive oil (~ a cup for each loaf)
-salt and pepper
1. dissolve yeast and sugar in warm water
2. add flour gradually until dough is solid, but still pliable and put a wet towel over the bowl and let it rise
3. roll out half of the dough into circle about 1/4 inch tall
4. wash green onions and chop
5. put the olive oil on the dough circle and sprinkle salt on it. spread the EVOO salt mixture over the dough
6. shake pepper lightly on top
7. scatter green onion generously on top
8. fold corners over to create a small square pocket
9. add flour and lightly press with a roller to an 8in diameter circle, creating a "cake" with layers of green onion and dough
10. dab a bit of water on top and add roasted sesame seeds to one side
11. drizzle EVOO in a tall sided frying pan and heat to med. high
12. add the cake and cover frying pan to allow for steaming, flip after 8 minutes
13. repeat steaps 3-12 for second loaf
